rcourtman 1f427bdae8 refactor: rename /api/v2/resources to /api/resources and remove all V2 suffixes ...

The legacy /api/resources endpoint was deleted in LEX-04, making the "v2"
prefix vestigial. This purely mechanical rename converges naming across
backend, frontend, tests, and docs with no behavioral changes.
